
That really is the great thing about summer! There are so many
delicious dinners we can prepare that take little time and effort and
yet result in such delicious, satisfying meals.
Because of the abundance of fresh fruits, veggies, and herbs at their peak at the farmers’ markets the less fussing with the ingredients the better, allowing the natural flavors to shine through.
Dinner last evening was just that. Grilled chicken simply seasoned with kosher salt and freshly cracked pepper, hot pasta with a fresh cold tomato sauce tossed at the table, a grilled baguette or roll to soak up all the sauce, and assorted grilled summer squashes. And don’t forget the freshly grated Parmesan or my favorite Pecorino Romano cheese!
Bucatini with Fresh Tomato Sauce
For this dish choose the freshest ripest tomatoes ( include some yellow ones if you like) and dice them. Add some crushed fresh garlic, sprinkle with a generous amount of Kosher salt, a little freshly ground pepper, a good amount of extra virgin olive oil, and lots of fresh basil which you can gently julienne or simply tear into small pieces.
After you have tossed it let this sit for several hours or less . That will be your cold sauce to use with your hot pasta.
