Fresh Strawberry Ice Cream Soda

Yesterday was my first visit to one of the local farmer’s markets and among the offerings were some beautifully ripe strawberries.  So ripe in fact that I knew it would be a shame to allow them to sit overnight.   I decided to use these juicy berries bursting with flavor in a Fresh Strawberry Ice Cream Soda served for dessert at dinner.

Here’s how I did it…

If the berries are ripe enough there is no need for a blender.  Simply mash the berries with a potato masher, and strain through a sieve, pushing the fruit through with the back of a spoon leaving behind any pieces.

Add a generous ¼ cup of the strawberry base to each ice cream soda glass.

Add enough milk (skim, whole, or anything in between is fine) to fill the glass  to 1/3.

Mix well with a spoon.  If the berries are not sweet enough you can add a bit of sugar.

Add 2 generous scoops of good vanilla ice cream to each .  Pour chilled club soda to the brim, and top it with a mini scoop of the ice cream.

Garnish with a fresh strawberry. 

Repeat the above with the rest of the summer’s berries and fruits for  a yummy summer!
