Tomato, Peach, and Melon Salad

This easy summer salad was a tasty side dish to the Buttermilk Fried Chicken we had last week.

The key is use the most delicious fresh seasonal produce you can find at your market or farmers’ market.

Add to the nice sized chunks of cantaloupe, tomatoes, and peaches, a bit of salt and pepper, and lots of fresh basil.  Finish it off with a nice drizzle of red wine vinegar and some good olive oil.

In March when the Pandemic began I decided to grow my own tomatoes on our deck.

We had grown tomatoes back in Maryland in the ground, but thought those days were over.

I just thought it would be fun to see how they would do in containers on our deck.  I felt they might thrive with the strong afternoon sun we get there.

And much to my delight they have! I have 5 different varieties…Big Boy, Better Boy, Big Beef, an Heirloom San Marzano, and a Roma called Little Napoli.

They have done better than I ever imagined, and I have been picking them for meals almost everyday for weeks.

I used the Little Napoli and the San Marzano in this salad.

So whether you grow your own, or get them at the market, I hope you will try this refreshing summer salad while tomatoes are at their peak!
