The Passover celebration with the ritual Seder meal began this past Saturday evening.
A little more than a year ago we found ourselves, individually, and world wide, in the midst of a Pandemic. We all were feeling vulnerable and unsure of what lie ahead.
We quickly found life as we had known it was changing in ways we could never have envisioned.
Nevertheless, the Passover holiday of 2020 was still observed, but in a much different way.
The traditional large gatherings of family and friends were not to be. Only those family members living together could sit around the table, leaving most households with many empty chairs.
Some celebrated virtually on zoom, a word we all are now familiar with, as a way of being together, yet apart.
Passover 2021 finds us in a much better place.
By following the health and safety protocols which have been in place, and the efficacy of vaccines which are being given, there is reason to believe we will be getting back to normalcy, all be it maybe a new normalcy.
Although many of us are still unable to celebrate this year with our loved ones, we came to the Seder table with a renewed spirit and the hope of being together in person for Passover 2022.

This year it was a table for two for Passover, but if anyone knows me they know I never cook for two. Here’s a glimpse of the meal we enjoyed, and the good news is there will be plenty of leftovers !
It’s not Passover without chicken soup and big matzoh balls…

Taditional gefilte fish (I cook over the jarred fish dumplings to make it more homemade, and always served with beet horseradish…

and chopped chicken liver with sour pickles…

Savory brisket and carrots, creamy mashed potatoes, and green beans…

My husband’s favorite cranberry fruit mold…

and for dessert my Passover Lemon Sponge Cake with fresh berries…
