

When I am looking for something for lunch and happen to have all the ingredients around I love to make myself this Vegetarian Pita Sandwich.
Although I am not a vegetarian I love vegetables and salads, and most days for lunch I like to make salads or eat leftover veggies from dinner the night before.
If I happen to have pita in the freezer, and hummus and feta in the fridge I’m set. Olives, tomato, lettuce, and onions are a staple in my kitchen.
I absolutely adore tzatziki and I make it often. In this case I had the ingredients in my fridge so I whipped up a quick bowl of it. I will use it on salmon and with veggies later in the week.
However, be creative and put any or all of the above combinations together and you will have a delicious sandwich. For instance, either tzatziki or hummus will do if you don’t have both.
You can always pick up a container of prepared tzatziki, but I have never tasted one as delicious as my homemade version.
For the sandwich above I spread roasted pine nut hummus on one half of the pita and scattered some sliced Calamata olives over it.
On the other half of pita I layered crisp shredded Romaine lettuce, thinly sliced onion and sliced ripe tomatoes.
I then sprinkled feta cheese on all and covered the tomatoes with some spoonfuls of tzatziki. Capped it off with a sprig of fresh dill.
That arrangement enabled me to fold it over to eat.
Still messy but delicious messy! Have plenty of napkins handy.
