
Every now and then the only thing I want to eat is a richly flavored hearty bowl of soup…and this reinvention of Ina Garten’s Lentil Sausage Soup fits the bill.
In this version I have substituted 1 cup of barley plus 1 -15 oz can of chili beans for the lentils, and replaced the sausage with 3 Kosher Grass-fed Polish Sausage Dogs (available at Costco). Use whatever sausage suits you, or eliminate it altogether.
For the original recipe which I had adapted, look here, and feel free to make these or your own substitutions. The cumin, and the splash of red wine vinegar really add to the depth of flavor of the soup.
And don’t forget to serve it with a drizzle of olive oil and some grated Pecorino Romano or parmesan cheese…”Mmm mmm, good!”
