BBQ Ribs for the Fourth!

We celebrated the fourth of July this year with our son and daughter-in-law and their dog Jackson who came down from San Francisco for the weekend.

This called for one of our favorite summer foods… our BBQ Baby Back Ribs with Sweet-Sour BBQ Sauce!                                                                         

Along with fresh corn on the cob, cole slaw, and some good bread, everyone was finger-lickin’ happy!

While rib racks are great when grilling for a crowd, the instructions for grilling without using the racks are below… (You will still prebake them as mentioned in the recipe above)  

1.Begin by cooking the full rack of ribs on low heat with the lid closed for about 3 to 4 minutes per side.

2.Baste the ribs liberally on both sides.  Place them bone side down, close the  the lid, and cook for about 6 minutes on each side. (for a total of  12 minutes)

3. Repeat this process one more time for another 12 minutes.

4.  Raise the heat to medium.  With the  lid open, rebaste both sides and cook each side another 6 minutes.(for a total of 12 minutes)

5 .Adjust heat and move meat away from any flare-ups  as needed so glaze is somewhat charred, but not burnt.

6. This layering of the sauce and careful attention to cooking should result in a delicious candied glazed rib!

For serving, you may want to cut the full racks in half to place on a serving platter.  Don’t forget plenty of napkins and/or wet wipes!
