There is nothing better than Thanksgiving left-overs! And we had our share of them this past week.
The last of the cranberry sauce and a small container of sliced turkey, stuffing and gravy found a home in my freezer neatly tucked away for some evening in the future when I don’t feel like cooking.
Between left-overs and laziness I haven’t done any marketing this week, and the cupboard and fridge were definitely looking a little bare.
Trying to come up with something for lunch the other day was a challenge.
I did have apples, raisins and walnuts leftover from my holiday shopping, some celery sticks, a piece of a lemon and some mayonnaise in the fridge, and some cold sliced chicken leftover from dinner the night before.
The makings of a delicious fiber and protein filled Chicken Waldorf Salad for lunch! If you still had leftover turkey that could easily be subbed for the chicken! Re-inventing that turkey once more!
I diced the celery and apples, chopped the walnuts coarsely, and added the raisins to a large bowl. Then added the diced cold chicken.
I mixed a small amount of good mayonnaise, a squeeze of lemon juice, and about ½ teaspoon of sugar together and blended it well, folding it carefully into the salad.
And lunch was served!
