HOLY GUACAMOLE!

Yesterday I noticed the 2 avocados on my kitchen counter were at that stage where you know if you let them sit one more day you will be throwing them in the trash.  I don’t know about you but for me there’s nothing better than a perfectly ripe avocado, and nothing worse than one that is overripe and beginning to darken.  I feel the same way about kiwi fruit.  

I immediately made a bowl of guacamole cause nothing could be easier or quicker, and it’s a good for you fat as well!  I tried Ina Garten’s (the Barefoot Contessa) technique for chopping the avocado in a bowl  with a sharp knife.  I think she uses two knives, but one worked fine.  It’s a great way to ensure that your guacamole will have a chunky texture. 

To that I added a little chopped red onion, a clove of garlic or two, a good splash of lime juice, a couple drops of hot sauce, and kosher salt and pepper.  I diced a little fresh tomato in there as well cause the tomatoes are so great right now.  The little sweet peppers are great for dipping, and they look so cute, too.  They have very few seeds so there’s no need to core them.  They are a colorful addition to a crudite platter as well. 

Anyway, that’s it from avocado to guacamole in no time at all!
