Honey Cakes for a Sweet New Year!

The Jewish New Year began Friday evening at sundown.  It is customary to eat sweet dishes and desserts  at this time with the hope the year ahead will be sweet as well.  We dip apples and Challah bread in honey and enjoy apple and honey cakes.

Each year I find myself returning to my favorite apple cake and honey cake recipes.

This year I made the same honey cake recipe I always make, which is aptly named The Definitive Honey Cake, but decided to make it in loaf pans instead of a tube pan. 

The batter is enough to make two 9-inch by 5-inch loaf cakes. Follow  the basic recipe, but shorten your baking time to about 45 to 55 minutes, and test thoroughly for doneness.

I baked a total of 4 cakes so I could send one to my brother in Chicago, sister in Pennsylvania, and brother and his family in NYC, and still have one to share with my family here.

As they say “food is love”, and although we are scattered throughout the country, we will all be sharing the same delicious honey cake this holiday and feeling the love.
