

Souvlaki is a popular Greek fast food consisting of small pieces of meat and sometimes vegetables grilled on a skewer.
As a fast food it’s usually eaten straight off the skewer while still hot, with pita bread served on the side.
Another option is to pile the meat in the pita with tomatoes and onions and top it off with the tzatziki sauce.
Traditionally in Greece the meat of choice is pork, but chicken, beef or lamb are all great options..
I found this fun video online from Akis Petretzikis for pork souvlaki kebabs, and substituted lamb for the pork as you can see above.
The lamb will require a longer grilling time than the pork. Lamb is best cooked rare to medium rare.
