Salads!

I love SALADS!   My husband loves SALADS!  My sons grew up loving SALADS and still do!  

I prepare some sort of salad to accompany dinner most nights.   

When I am looking for something for lunch for myself I can almost always put together an interesting salad even when the larder needs restocking. 

In fact I have discovered some delicious combinations when forced to select from an almost empty fridge.

For example, that almost empty jar of chili corn salsa on the shelf, why not add a few spoonfuls to the salad along with that lonely apple in the fruit bowl? 

Or  how about those left over cold green beans or sugar snaps from yesterday’s dinner…they might go nicely with that last little piece of feta, and that handful of candied walnuts in the bag… you found a jar of pickled beets in the back of the pantry?  Perfect, throw some in!  

Out of lettuce?  Chunk up whatever veggies you do have, toss with a creamy vinaigrette and enjoy! Before you know it you have made a Greek peasant salad! 

Not enough veggies on hand?  Throw in some cut up fruit or grapes that might be hanging around … squeeze the juice of that orange into your homemade vinaigrette!    I’ve discovered I love persimmons in a green salad!

With a well stocked pantry there will always be something to add to a salad, especially if you are low on fresh produce… 

Some of my favorites  I try to keep on hand are canned tuna, (especially yellowfin tuna in olive oil), canned salmon, anchovies, jarred hearts of palm, artichokes, beets, olives, and corn salsa. Nuts and dried fruit are another great addition to many salads.

I like to dress most of my salads with a homemade vinaigrette. 

 The possibilities are endless with the varieties of vinegars and olive oils available. 

It can be as simple as just good olive oil, vinegar, Kosher salt, and pepper, or…

With the addition of herbs, garlic, mustards and citrus juices you can create a more complex dressing to complement a particular salad.   

In looking through my photos I came across a number of salads, some of which I have posted on this blog and others which were just spontaneous creations.
