For Valentine’s Day this year I went back in time to this light and luscious cake I first blogged in 2013, and have made for several occasions over the years.
Strawberries and Cream Spectacular is the perfect name for it. You can find the recipe here. Included are step by step photos!
The double cake layers are light, but yet very flavorful and moist. Lemon extract gives it just enough lemony flavor complementing the ripe strawberries and the vanilla whipped cream.
The filling between the cake layers is simply some of the whipped cream combined with a cup of chopped juicy strawberries adding another delicious dimension to this surprisingly easy cake to make.
It is not necessary to use a pastry bag and tips to decorate the top. You can choose to fill the spaces between the berries with dollops of whipped cream.
Fortunately here in San Luis Obispo we currently get delicious fresh strawberries from our farmers’ markets. If they are not yet available where you live, just tuck this recipe away. Strawberry season is coming soon!
