Strawberry Lemonade

Fresh lemonade is one of my husband’s favorite drinks…and strawberries, one of his favorite fruits. So for a beverage to go along with our Father’s Day menu this past Sunday I made this  Strawberry Lemonade from The Brown Sugar Kitchen’s cookbook.

I haven’t made fresh lemonade for quite some time, but I used to make it often when my children were small.  Once you’ve tasted fresh homemade lemonade you’ll see frozen or packaged lemonade just can’t compete.

By mixing the sugar with the zest of the lemons the sugar takes on a more intense lemon flavor. 

Here’s the recipe…

Strawberry Lemonade (Brown Sugar Kitchen Cookbook)

Lemon Sugar

¾ cup sugar ( I use superfine sugar because it blends well)

Zest  of 2 large lemons 

2 cups fresh or frozen strawberries, plus 4 to 6 for garnish

2 cups fresh lemon juice, plus lemon wedges for garnish

4 cups water

Ice cubes

To make the lemon sugar: In a small bowl, combine the sugar and lemon zest. (To make ahead, refrigerate in an airtight container for up to 3 days.)

In a blender or food processor, combine the lemon sugar and strawberries and process until the sugar is dissolved and the berries are smooth.

Transfer to a pitcher, and stir in the lemon juice and water.

Cover and refrigerate until cold, at least 2 hours or up to overnight.

Serve in tall glasses over ice, and garnish with lemon wedges and strawberries.  So refreshing and not overly sweet, just right!

This delicious summer drink can be made with fruit other than strawberries…try mango , blackberry or raspberry!
