Tomato-Peach Salad with Fresh Basil and White Balsamic Vinaigrette

Summer and salads!  They go hand in hand!  

At this time of year when the peaches are at their best I love to add them to salads.  

This salad I prepared recently with red ripe tomatoes and juicy fresh peaches from the Farmers market.  You want somewhat firm but ripe peaches, not too mushy.  

It’s okay to let the juices of the the tomatoes and peaches mingle cause it will only add to the flavor of your salad.

I added some fresh greens (romaine holds up well), and torn fresh basil leaves.  If  you like you can add thinly sliced red onions and cucumber slices as well.

I dressed it with a  simple vinaigrette made with white balsamic vinegar (goes great with the peaches), extra virgin olive oil, kosher salt and pepper.

Serve immediately after dressing.  It’s a peach of a salad!
