I haven’t posted anything for almost a month for a very wonderful reason. Our grandson who will soon be 9 months old came to visit for the first time with my son and daughter-in-law!
Due to the pandemic we have visited him twice, at 1 week, and again at 4 months, with many safety precautions in place.
We kept up with his development and watched him grow via an abundance of photos,videos and FaceTime visits for which we are forever grateful.
Having him here along with his Mommy and Daddy was the absolute best!
In between time spent playing and loving him up I did prepare dinners most nights, and my son cooked a delicious dinner one evening as well.
I made this Wedge Salad to go with grilled burgers, corn and baby broccoli one evening. I don’t remember ever making a wedge salad before, but it is one I often order when dining out.
I didn’t follow a recipe, just threw it together with what I thought would be a good combination…
Applewood smoked bacon torn into good sized bits, thinly sliced radishes, small-diced tomatoes, blue cheese crumbles, and candied pecans, all scattered over crisp cold iceberg lettuce wedges and covered with an ample amount of blue cheese dressing.
I discovered a delicious jarred blue cheese dressing which tastes homemade in the refrigerated case of Whole Foods. Check it out…Toby’s Blue Cheese Dressing & Dip. It is handcrafted in small bunches, using only quality ingredients, and nothing artificial.
I forgot the grated hard-cooked egg for the garnish on top, but will remember to add it next time.
We all agreed it was a really tasty salad, but not quite as delicious as our little grandson!
