Making a stew or soup from your leftover turkey carcass is a great idea. I would suggest making a turkey stock with it now, and then freezing the stock, so you will be able to use it to make a flavorful gravy, soup, or stew for your next holiday. I will post my favorite recipe for turkey stock soon.
Bread stuffing will freeze well, and can be reheated with gravy.
I have to admit I prefer using up the turkey in other dishes that you can enjoy now or freeze for later. Among them are turkey chili, turkey enchiladas, turkey tetrazzini or turkey pot pie. You can mix gravy with the leftover cut up turkey, add some veggies such as peas, carrots, green beans, or corn to it and cover with mashed potatoes. Bake this casserole until the turkey is heated through and the potatoes are crusty on top and you have turkey shepherd’s pie.
Or layer leftover turkey, stuffing , and mashed potatoes in a single serving or casserole dish, cover with gravy, and freeze for a future meal.
Leftover mashed potatoes can be mixed with an egg or two, and pan fried to make potato cakes. Check out my recipe for the risotto cakes made with leftover risotto. It’s a similar process.
If you have fresh whole cranberries that you haven’t cooked left over you can freeze them. Then either cook them or use them to fill the bottom portion of a vase that you fill with flowers. This was on my Thanksgiving table. It’s especially fitting at Christmas with some greenery in your vase.
Cranberry sauce mixed with mayonnaise makes a delicious spread for a turkey sandwich. You will find that cranberry sauce also freezes very well.
Leftover bread or cake can be frozen and later used in a bread pudding or trifle.
